Creole Jambalaya – The 2007 Creole Heritage Zydeco & Crawfish Jambalaya was a tremendous success, held on the campus of Texas Southern University on April 13&14, this event attracted over 4,000 people from all over the country including; Louisiana, Colorado, California, Georgia, Massachusetts, and yes of course Texas.
Festival attendees enjoyed food native to Louisiana including Gumbo, Boudin, Etouffe, Sausage, Crawfish and Red Beans & Rice. The real reason everyone came was for the dancing, and dance they did.
